Immunity Boosting Bone Broth Soup

This comforting soup is warming, easy-to-digest and packed full of healthful ingredients.

Growing up in America, chicken soup is the supposed cure-all for any sickness. As a kid, I kind of loved the days when I was forced onto a bed made on the couch and fed soothing teas and soups until whatever I felt better. I do the same thing for my own children, and like my mother, I try to include as many healthful, immune-boosting ingredients into their teas and broths.

This is the soup my kids ask for every time they are feeling under the weather. It is chock full of wellness makers and yet it is as tasty and comforting as chicken soup. In fact, my kids love this so much, they have never noticed that there is not chicken meat in it.

Immunity Boosting Bone Broth Soup 1 large onion

1-2 large cloves of garlic

1 celery stalk

2 small carrots

1 Tbs. ginger, grated

1/2 cup parsley

1/2-1 tsp turmeric

3 cups bone broth or vegan broth

3 cups water

1 cup rice

I use homemade vegan bone broth or bone broth that I made from organic fed, free ranged raised chickens.

In Ayurveda, turmeric is believed to be some kind of magic ingredient, infusing energy, aiding in digestion, relieving inflammation and so so much more. I put a little of this magic spice into almost everything I make (including my morning coffee or tea!). If you're new to using turmeric, start with 1/2 tsp and increase as desired.

Parsley is amazing! Among other benefits, it has more vitamin C than oranges! Not only is parsley tea fantastic, parsley is a great herb to add into soups, salads, and anything you can. Again, start with 1/2 cup and increase as desired from there!

Ginger is a digestive powerhouse food and offers a wealth of other benefits. In Ayurveda, it has been used to reduce inflammation, decrease joint pain, treat motion sickness and more. Adding a small amount (or large amount) of ginger in is a great way to integrate this healthful food into this soup.
